Have bandits at a remote outpost steal an appropriate amount of Supplies to teach the player that constant starvation is their friend. This could be improved by restricting the severity of the first couple of times when each regular source of ruin is encountered, so that it's reliably survived even with completely inappropriate preparations and response, providing hints in event texts that this gets much worse and how to manage it and prepare for it in those cases (I think road taxes are already handled well in this respect, but beast or cannibal attacks aren't).

The problem is unexpected sources of ruin and unexplained sources of misery. If you immediately give up on grasping the basic mechanics, survival on easy mode would probably still be miserable.

Easy mode is probably easier for progression, but the complaints are about basic survival, which is already easy on normal mode.

It's confusing why easy mode would be relevant to the difficulty complaints. It should give you a good idea of the difficulty expected. Note: there's a demo for Vagrus, definitely try that out and see for yourself. Sunless Skies is a much easier game (to the point that it's almost trivial to be rolling in cash pretty quickly, so much so that it makes many of the stories in the game seem almost irrelevant), many like it more, but I thought it wasn't anywhere near as good - and the combat in that one is like a shoot-em-up (albeit a slower-paced one). Sunless Seas is somewhat similar in this regard - except that game has more grind, and the combat is a real-time thing which isn't all that tactical. Once you know what you're doing, there will likely only be a few quests that might be difficult, and even then only if you're not prepared. And once you know what you're doing, it's actually relatively simple to just ensure you don't get into these bad situations in the first place. However, compared to other games where RNG can screw you, in this game it's usually possible to recover from really bad situations. The secondary 'difficulty' is due to RNG screwing you via combat. The primary difficulty lies in the fact that the game has many complex mechanics, which aren't obvious. It's actually much less difficult than the warnings have you believe.
